BANANA MUFFINS
Ingredients:
2 c. flour
1 ½ tsp. baking soda
½ tsp. salt
4 overripe bananas
1 c. brown sugar
¾ c. butter, melted and cooled
2 eggs
1 tsp. vanilla
¼ – ½ c. chopped walnuts
Instructions:
Preheat oven to 375°F. Lightly grease a muffin or mini-muffin pan. Stir together flour, baking soda, and salt; set aside. Mash two of the bananas with a fork—leaving a little texture to them, set aside. In a large mixing bowl, beat remaining bananas and brown sugar until smooth. Add butter, eggs, and vanilla; beat well. Mix in dry ingredients until just incorporated. Fold in mashed bananas. Spoon batter into muffin tin, fill halfway. Bake until toothpick comes clean, 18-20 minutes for regular-sized muffins.
